The culture of cattle grazing and agriculture continues in the hands of Kurdish women in Kurdistan. In spring, the product of their months-long work appears, and in the same season women start in preparing cheese for summer.

But because of the lack of rain this year and the lack of adequate livestock, women in the villages face difficulties in securing milk.

In this regard, Mariam Mohammed, from Abu Surra village in Ain Issa, said that they have been grazing sheep and making cheese for years, Mariam feeds on the sweat of her forehead and talks to ANHA about the stages of cheese industry and the difficulties they encounter.

Mariam confirmed that they feed their cattle in spring and after grazing, they milk them in the morning hours of each day, "after milking the cows, they spray the cheese making material in the milk, then put it in a piece of cloth to solidify the milk.

After hardening the milk, cut and spread salt, and remain in this shape until summer, to be eaten after.

"There is no cheese to sell," she said, "on the other hand, the price of one kilo of cheese is 900 SP, which is a low price."
